Recipe - Grilled Zucchini Spears

We are in LOVE with this new way of preparing zucchini. Not only does it take only minutes on the grill to cook, it’s easy to prep & delicious!

Ingredients:

  • 3 zucchini with the ends trimmed, cut into spears*

  • 2 tbs olive oil

  • 1/2 tsp kosher salt

  • 2 tsp Johnny’s Garlic Bread Seasoning OR (1/2 tsp garlic powder, 1/4 tsp onion powder, 1/2 tsp oregano, 1/4 tsp dried basil, 1/8 tsp black pepper)

Directions:

  1. Preheat your grill on medium heat (around 400 degrees).

  2. Place spears in a mixing bowl and pour in olive oil. Mix with the spears until completely coated.

  3. I place all of the spices and salt into a large plastic bag and give them a little shake to combine. Then add the spears and shake the bag to evenly coat the spears with the spice mixture. You can also premix your spices into a small bowl and then add them to your oiled spears.

  4. Place the spears on your preheated grill and cook for 2-3 minutes per side.

  5. Top with your favorite cheese for an extra boost of flavor. I’ve topped with crumbled feta and an aged cheddar, both were great!

*Pro tip: When cutting it into spears, I take the knife and scrape away the majority of the seeds. Not only does it get rid of the seeds, it allows the spear to sit more fully on the grill.
